Blueberry & vanilla ice lollies
Yum! Blueberries don’t just make a great combo with yoghurt, they also make a great addition to homemade ice cream. This is a super quick and easy recipe, all you need to do is dip the blueberries in homemade vanilla yoghurt (homemade is lower in sugar than shop-bought) and freeze them. So you end up with a homemade tasty treat while still having plenty of time to focus on the important things in life: like relaxing with a book in your garden or on your balcony. What do you need?
Popsicle molds
Apr. 250ml vanilla yoghurt (tip: make your own, shop-bought vanilla yoghurt usually contains lots of sugar. An option that is lower in sugar would be mixing natural yoghurt with a little bit of icing sugar and a pinch of vanilla seeds that you’ve scraped out of a vanilla pod)
2 tsp lemon juice
A punnet of blueberries
Directions:
Combine the blueberries, lemon juice and yoghurt in a bowl and gently stir. But be careful, mashing the blueberries would be a shame and the end result won’t look as good. Pour the mixture into the popsicle molds and then pop a stick into each one. Put into the freezer and leave to set for approximately two hours and your ice lollies are done! Enjoy!

Healthy chocolate ice lollies
