Hit “play” on your Christmas song list, it’s time to get your bake on!

Whisk the butter and sugar until light and fluffy. Then whisk in the molasses, spices and salt. Sift the flour and baking powder, add to the mixture and knead to a dough. Wrap the dough in clingfilm and let it rest in the fridge for 30 minutes… time to indulge in some hot chocolate.

Are the 30 minutes up? Make sure you preheat your oven to 190°C (375°F/ mark 5) and line the baking sheet with parchment paper. Roll the dough 3 mm to 4mm thick. Cut out the shapes with a Gingerbread cookie cutter. Transfer the cookies to the baking sheet and bake in the oven for about 10 minutes until golden brown. Yum, it’s beginning to smell a lot like Christmas!

Time to decorate!

Let the cookies cool for a crispier texture and then transfer them to a rack to cool completely.

And now for the fun part; time to decorate the cookies with icing. Put the icing sugar in a bowl, add water and mix until the icing is smooth and thick enough. If the mixture is too thick, you can add some more water (a drop at a time). If you want to use different colours of icing, you should split the icing into several bowls and add a specific colour to every bowl. Put one batch of icing in the piping bag and decorate the gingerbread cookies one colour at a time. Get creative, gorgeous!
